In keeping with the style of this cooking page: Because I work mostly with fresh vegetables, herbs, fruit, fish, legumes, nuts and some meats, AMOUNTS ARE QUITE OFTEN NOT SPELLED OUT. If you are like me, you prefer to experiment with, and figure out, your own amounts according to your personal taste. I also try to allow for interchangeable choices (vegetables, herbs, etc), in case you don’t have something on hand that I have listed, or if you prefer a different kind.
